Zucchini Parmigiana & chicken meatballs tonight…
The zucchini was salted and in a colander to extract
the water …then it was dried between two dish cloths.

First dredged in flour and then dipped in whipped eggs with
some half and half and a big handful of Parmesan cheese…

Fried and then I made three layers with a little sauce, Parmesan
cheese and mozzarella…baked for 30 minutes @ 375° and
then I put mozzarella on top and baked for 5 more minutes.

The chicken meatballs, I ground one breast ( it made 2 cups ground chicken)
added about 2 tablespoons olive oil, about 1/3 cup Parmesan
cheese, about 1/4 cup of seasoned bread crumbs, parsley, salt/ pepper,
Garlic powder, Italian seasoning…then air fried for 10 minutes and then cooked
them in Marinara sauce for 30 minutes…I first simmered the marinara sauce
first for 30 minutes…

The salad was romaine lettuce, tomato, red onion, kalmata olives,
Grape leaf, eggs, goat cheese, croutons and EVOO and red wine vinegar.

Princess..I just remembered a fail…a few weeks ago, I made a chicken soup and wanted to make ricotta balls…
so, I wrote up this recipe thinking that I could made drop ricotta balls…well, they totally fell apart and dissolved in the soup. The soup tasted good, however, it turned into a creamed soup ( not my intention)…the mistake that I made is that I put milk and butter into the ricotta with mozzarella and grated Parmesan cheese and it was too wet..
but, plan on making it again…without the butter and milk.
