It's very cold today, well, it's cold to us, which means I get to start cooking some of our favorite meals that require the oven. So today, we have meatloaf!


As with most recipes, I found the original recipe on the internet and completely changed it to reflect our tastes. It's plain, it's simple, but it is downright amazing. I serve it with brown gravy, no glaze.

The hoisin and soy sauce combo came about because I was out of Worcestershire sauce and googled, “Oh my God, I'm out of Worcestershire sauce.”

Not cooking today unless you consider warming up leftovers cooking. @PickyPrincess that meatloaf recipe is similar to what I make but less of it and no hoisin or soy sauce just liquid smoke and Worcestershire maybe, don't remember.

I made a big pot of vegetable beef soup on Friday. I had a bowl last night with some Parmesan Regiano grated on top, a sprinkle of course Kosher salt and two slices of fresh baked Crusty bread with butter on the side.
Same tonight except I will bake some corn muffins. My wife likes them. She will join me this evening for dinner.

Beef stew tonight. I wasn't happy with the chuck roast my mother picked up, lemme tell ya. I had to trim off at least a pound of fat.

Anyway, beef dredged in salt and pepper seasoned flour and seared off, baby potatoes, carrots, store bought beef broth, red wine and seasoned with parsley and winter savory. 8 hours in the crock pot later and it's supper.

Grilled cheese for breakfast this morning. I know, weird breakfast choice and a simple sandwich but I happen to think I make a pretty good one.
I'm not a fan of declaring some foods are "breakfast-only" or "never for breakfast." We will sometimes have pancakes, hash browns, sausage, and eggs for dinner. I'll eat anything at any time...that's part of the problem... :)

Nothing weird at all about that. I had a flour tortilla with a full width piece of smoked sausage and sauerkraut piled onto it.

I'm not a fan of declaring some foods are "breakfast-only" or "never for breakfast." We will sometimes have pancakes, hash browns, sausage, and eggs for dinner. I'll eat anything at any time...that's part of the problem... :)
I much prefer for breakfast an evening style big meal, meat and taters, etc then eat lighter as the day progresses.

Hot dogs and beer is a favorite of mine.
I love chili dogs. Mustard on the bun, weiner, medium or sharp shredded cheddar cheese, diced onions, chili, more cheese, more onions. I used to eat three, stack them on a plate triangle fashion, two and one in the middle on top. More chili cheese and onions. I can only eat two of them now.
I love my beer but cannot drink any alcohol with a meal, it's sweet tea or nothing. Nothing usually.

We love "breakfast for dinner" around here. I don't go all out, it's usually bacon, scratch made hash browns and eggs cooked to order. I do a cheese omelet for myself, then fill it with bacon and hash browns at the final fold.
Pancakes and bacon for dinner here.

Yesterday I had a medical appointment that did not go the way I expected, and today I have a presentation at work, which means I will be stress cooking instead of stress eating. I have a date with 6 pounds of chicken, an InstantPot, 4 ounces of mint, a pint of Vodka and a vacuum sealer.

I'll pressure cook all the chicken, then shred it, and portion it out to use in King Ranch Casserole, chicken and dumplings and whatever I can think to use it in. The mint and Vodka will join each other in a mason jar and vacuum sealer ceremony and produce the loveliest mint extract that will be ready in just a couple of months.

I'm about ready to unseal the vanilla extract I started earlier in the year and will make a plain cheesecake to see what flavor profile this new batch of vanilla has.

The great thing about working from home is I can do all this on my "breaks".
