I love this stuff. Recipe follows.




These are very easy to make and if too hot you can adjust by reducing the number of peppers you use. I haven't made it with Mexican oregano but the next batch I will since I discover the Amazon link in the recipe.

Yeah this is a refrigerator pickle. The Ph tests right at a toss up for water bath or pressure canning. The recipe specifically says it isn't set up for canning so I haven't tried. I think pressure canning would likely over cook the peppers.
