Sunday Dinner for two

Sunday Dinner …I made stuffed shells, meatballs and sausages.
My pooch was begging for a meatball…she’s so Italian 😅🥰😋
The shells are stuffed with 16 oz ricotta, 4 oz mozzarella, a big handful
Of parmagna cheese, chopped parsley, salt…baked them for about
1/2 hour at 375° until they were all bubbly…delicious. 😋

I've got a couple boxes of jumbo shells and I've just been putting off making stuffed shells. Actually I've done innerweb searches periodically for something beside a cheese filling and trying to dream up something to stuff them with. I got no imagination.

Squeezed out frozen spinach…some ground fried sausage…some Parmesan cheese…and some mozzarella…
Yes that's what I was looking for. The parm, mozzarella and mild Italian sausage giving a pleasant taste with a little kick from the sausage. Served in a not too thick tomato sauce with bruschetta. Does that sound about right? And a surprise dessert I'm not telling.

I'll manage. The stuffing is probably to thick to pipe it but a plastic spoon or a small dessert spoon would do it. You realize stuffing manicotti is more challenging.
