Firstly, our daughter brought over sour dough starter that her son made
while he was home for the holidays…he baked unbelievable delicious sour dough bread in a Dutch oven, every day…Her boys love to cook and bake, they take after their father whose a wonderful cook…( hobby)
I decided to make rolls, with my sour dough starter…iI had to keep adding flour until it pulled away from the bowl…I mixed it all by hand, and kneeled it with even more flour.

Here is the original recipe.
Skillet Rolls

INGREDIENTS
1 tablespoon instant dry yeast
1 cup warm water
1/4 cup honey
1/4 cup melted salted butter
1 teaspoon salt
1 large egg
2 1/2 to 3 cups all-purpose flour

Here is what I did…
Instant Rise Skillet Rolls
1 cup sour dough starter mixture
2 1/2 - 3 cups flour
2 teaspoons yeast
3/4 cup warm water
Pinch sugar to activate the yeast
1/4 lb unsalted butter
3 Tablespoons honey.
1 1/4 teaspoon kosher salt
1 large egg.
Let raise for 1/2 hour in warm place…
Then divide into rolls and place in buttered skillet …cover and let rise for 20
More minutes..brush rolls with melted butter and sprinkle with everything
But the bagel seasoning and I sprinkled it with some rock salt.
Heat oven to 400° …bake 25 minutes…then I put the broiler on and watched then carefully for a couple of more minutes…I hope it tastes as good as it looks. 👍💕😋 BTW…this book is the absolute book for baking bread…this is where I got the idea for making all breads and pizza dough in the food processor,
and all the recipes are written well. I mean reader friendly.

The head guy made coffee and heated up the rolls in the air fryer this morning…soo good.

I remember a discussion on making pretzels, may have been at WWZ. Are you going to make a lye solution to soak them in?

And this is the recipe that my daughter recommended to make pretzels( with the discard) …it’s simple, however, it calls for 1/4 cup powdered milk…I’ll have to pick up some powered milk.
You know you can also use the pretzels to make a sandwich…pretzel sandwich, how fun!
She said these are so delicious…I already just got rock salt ( from my son for Christmas, lol)
this recipe looks easy…

Ok soft pretzels I take it. I like this for powdered milk, I quit using non-fat powdered milk and I think my baking tastes better with this over non-fat.

You know, I did mention that I mixed this whole bun recipe with a bowl and big spoon. I kept adding flour until it came together, then I dumped it over on the floured counter;and kneaded it for a couple of minutes…it was really fast and easy…I think they’ll be a lot of these delicious light and airy rolls in our future…I need to give my youngest son some starter,
he makes a lot of bread with his boys…they love bread. My youngest grandson loves garlic bread…
I think this bread would lend itself well to garlic bread, just add some lightly sautéed chopped garlic in a bit of butter.

That seems a good price compared to what I've seen here. That's the size I have I think. Don't recall exactly but I think I got in off Amazon.

What is the difference between this and regular whole dried powered milk?
the only problem is the first delivery is Jan 16…I find that with these late delivery dates they are always delayed…I’m waiting on three delayed orders now! they were suppose to be here
Jan 5th and it’s delayed until January 14th …and it also said, if I don’t get it by the delayed date, I can cancel..
Amazon is really disappointing lately…

on the other hand…
I ordered two things yesterday, and I’m getting delivery today…
this is more in keeping with my instant gratification persona. 😀

The only other whole powdered milk I've tried is Hoosier Hill brand also from Amazon. The Nido tastes, to me, richer. I've had a few late deliveries with Amazon also but more trouble with damaged deliveries. Damages caused by USPS, UPS and FedEx and a lost package with FedUp also.
Nido is a Nestle company and that my make a huge difference. I think Hoosier Hill may be a specialty outfit.
Check your Spanish markets for the Nido, it seems targeted to those folks at least here.

I haven't seen that one. Considering the brand it ought to be pretty good.
