I think that there is an abundance of food but it is being grown/supplied and marketed by corporate entities in large part and even the private farms grow things these entities will buy. These other disappearing foods are vanishing because they are not before the public so they may be little known and becoming less so.

I've found so many heirloom varieties at farmer's markets that have inspired me to grow them myself and have run into trouble getting the seeds because they sell out.

That said, unless you're exposed to the heirloom varieties, you don't know about them and not everyone has access to farmer's markets where you can buy them.
For heirloom varieties I get seeds at Baker Creek Heirloom Seeds. They specialize in non-hybrid, non-GMO, non-treated, and non-patented seeds and their seeds come from small farmer and seed growers.
