I made this yesterday to go with the meatloaf and didn't really follow anybody's recipe just my ideas and combination or reading some recipes. They are all similar.

2 cups cooked rice
10/12 oz petite diced tomatoes, about 2/3 of a can drained
1 cup corn frozen or canned drained
15 oz net wt can of black beans drained
1 to 1 1/2 teaspoon ground cumin or to taste.

Combine it all and eat it.
If you have dehydrated red and green bell pepper you could rehydrate and add that or fresh peppers. Maybe some onion. You really could take it any direction with additional stuff in it.

I went room temp on it last night. Had it for breakfast nuc'ed so either way. The black beans were rinsed.

Next time I do this I'll cook the rice in apple juice or chicken stock.

Yeah probably not the apple juice that's better on farro. Farro could be substituted for the rice and it would still be good I think. I'll give that a try also.

Yeah I know, there ain't nothing new. That was the saying 40 yrs ago in the oil field. All the major equipment was derived from mining equipment.
