Ok, I’ve been banned from my kitchen for three days.
The head guy noticed that my end cabinet had a sagging
shelf…well, it turned out that all the cabinets had to be emptied
on one side of the kitchen…I have too much heavy stuff packed
In there…🙁 the doors had to be removed and the whole thing
had to be reinforced…Today was clean up day…all day.🙁
Finally, tonight “Joann Can Cook” …and I made something delicious
The head guy had 3 bowls full….It was deliciouso 😋

Ziti /Rigatoni with Pistachio Sauce
Here’s my Recipe
First roast 2/3 cup pistachios nuts in
a dry cast iron skillet for a few minutes.

2 Tablespoons extra virgin olive oil
2 Tablespoons unsalted butter
1 &1/4 cups half and half
2/3 cup roasted pistachios (divided - put most
of them in the mini processor and grind them-
Reserving about a 1/4 cup for a rough chop)
1/2 cup + pecorino Romano grating cheese
2 Tablespoons parsley chopped
2 Tablespoons torn basil
*Couple pinches of Italian seasoning
Couple pinches of Salt
Fresh ground pepper
About 1/2 cup pasta water
1/2 lb Rigatoni.

In a large frying pan add olive oil and butter and onions
and garlic and sauté until lightly brown
add the ground pistachio’s and sauté for a few
Minutes longer…lower the flame and add the half & half
do not boil it..keep it on a low simmer, stirring frequently.

Remove from flame and add grating cheese and stir it.
After a minute or two return pan to flame
and add about 1/2 cup pasta water

And then add the cooked pasta…and add the rest of the
Rough chopped nuts…stir together for a couple of minutes,
and then put into serving dish…

I just made a quick salad with, lettuce, tomato, red onion, green olives,
Kalmata olives, Gorgonzola cheese, croutons and bacon

The Italian salad dressing is the head guy’s favorite:
2 Tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
1 teaspoon bacon fat
1 Tablespoon water
1/2 teaspoon stone ground mustard
1 teaspoon honey
Salt/pepper to taste
Pinch Italian seasoning…
*Note: I make my own blend of Italian seasoning
with dried oregano, rubbed sage, thyme, & rosemary.

Mmmmm.
One version
this is basically the way I make it, except without the hot pepper, garlic powder, parsley, and basil…I add all those separately when cooking.
