Penne ah al Vodka …this sauce has butter, onions, garlic,
cream and pecorino Romano

First I fried up six meatballs and 2 sausages.

For the sauce:
I fried about 1/3 cup finely diced onion
and three chopped garlic in Two tablespoons
Extra virgin olive oil and one tablespoon unsalted butter
Until lightly browned.

Then added 1/2 cup of vodka and simmer it for a few
minutes …Then I added 2/3 of a 28 ounce can of tomato’s sauce.
(note: you can also use plum tomatoes, that you wiz through the
food processor for a few turns to mash the plum tomatoes. )
Then add Salt/pepper, a pinch of hot pepper, three tablespoons chopped
Parsley, one teaspoon of Italian seasoning, then added the
meatballs and sausage and simmered it for a half hour…

After a half hour I then removed the meatballs
and sausage…at this time the penne was cooking, ( I cooked 1/2 lb of Penne)

I then added to the sauce a little bit more than a half cup half and half and another
Tablespoon unsalted butter and 1/2 cup pecorino Romano cheese.

At this time I also added several basil leaves…when the pasta was almost done I then added 1/2 cup pasta water to the sauce…strained the penne and added It to the sauce pot and stirred for about three minutes while the meatballs and sausages were heating up in the microwave. This was soo delicious. 👍💕
I had 4 meatballs left over for the head guys meatball hero for lunch
Tomorrow. 👍
