I made this recently, and want to share it with
you guys cause it was soo delicious.
My Recipe for Fifteen minute Pasta Pomodoro for Two …
It’s so light and delicious. I cooked and served it in the same
Cast Iron Wok. 👍 Really, my guy, said that it’s the best
marinara sauce that he ever tasted. Pushing all modesty
aside, I have to agree with him. 🙄😋 it’s such a fast sauce…
you only need to cook it for about 15 minutes…by the time the
Pasta is cooked - the sauce is ready…it has a northern Italian
Flare to it because the sauce is cooked fast..that is the way
Sofia Loren likes her sauce cooked. I do as well.🥰
I also made chicken cutlets Dipped in egg and then panko breadcrumbs
that I mixed with grading cheese and parsley…and fried, then topped with
Sautéed mushrooms…served it by putting some marinara sauce on the bottom of the plate…then put the chicken on top of the sauce.
Pomodoro Pasta
4 tablespoons of extra virgin olive oil
3 cloves thinly sliced garlic
1 - 28 oz can plum tomatoes run through
food process quickly to just chop up a little…
1/4 cup half and half (or milk)
about 1/2 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes or to taste
Salt/pepper to taste.
At the very end add:
1/4 cup parmigiana cheese
1/4 cup pecorino Romano
Big handful of torn basil
Then add (8 oz. Of short rigatoni
Lastly add about 1/3 to 1/2 cup pasta water
Fry garlic in olive oil until lightly browned. Add tomatoes,
Half and half, Salt pepper, hot pepper, Italian seasoning,
Bring to a boil, lower flame and simmer for about 15 minutes…
At the end just before adding the cooked pasta, (8 oz) add
the the basil and the grading cheeses…then add the pasta to
the pot and about
1/3 to 1/2 cup of pasta water…simmer all together for a couple of minutes,
And serve, and add some more basil and grating cheese on top.
It was sooo good…the head guy ate the whole bowl of
Pasta…it is now our favorite marinara sauce.
The cucumber salad, cut the cucumbers remove the seeds and
salt them and put them in a strainer to release the water…
The sauce recipe I got from my son…a couple heaping tablespoons
of sour cream…a little chopped red onion, a chopped scallion, and
One small smashed and chopped garlic, salt and black cracked pepper.
