I have some frozen baby octopus. The package directions say to simmer for 90 minutes then proceed with the recipe. I will fortify the braising liquid.
I need some ideas.
I have had and really liked grilled octopus Greek style (olive oil salt and pepper).
But its to cold for grilling.
Any suggestions appreciated. I'm leaning on a version of grilled octopus but in the oven? Maybe a red wine sauce? Tomato based sauce? I have also seen some recipes for pickled octopus. Maybe a salad with octopus? TIA.

Don't know about octopus, I've eaten fried squid rings though and like them. I did find in the grocery store once some cans, like sardines, of octopus tentacles. They tasted sort a like chicken and the suckers made it interesting.

Octopus is a lot like squid; it gets a bit tough and rubbery when overcooked, but nice and succulent when done just right. Go to the Korean section of town and get some octopus gyoza (dumplings) and pan or deep fry them. So good!

Hmm. "TIA"? Do you mean this?

I follow a Portuguese recipe. I'm sure it's quite similar to the Greek. You can find a dozen that are basically the same with a Google search. There will be 2 significant differences: the kind of pepper they specify and whether they tell you to boil the octopus from cold.

I mean put a chilled octopus in cold water and bring it up to a boil. You don't need anything in the water at this stage. Boil the octopus until the water is dark and starting to get scummy on top.

This works well for small octopus. I can't ever find them over 2 lbs anymore.

How did you dress the octopus? The ones I bought are still in the freezer. My wife will not eat it so I'm waiting on my daughter who will eat it. Happily!
Olive oil, sea salt, pepper (white pepper is nice in this preparation), crushed garlic. I've seen recipes that call for coriander but I don't think I used it. Also the juice of half a lemon. I whisk everything together in a guacamole bowl and drizzle it over the cooked octopus while it's still hot.
