I just realized I don't have horseradish. I may leave it out because wife is pretty much intolerant of any spice heat. Or I'll delay the whole thing a couple days, get the horseradish, make the mustards and let them mature for a day. That might be the best option though I can make the Dijon today.

I've finally got everything for the remoulade so I'll make that today and the Shrimp and Grits tomorrow.

Well this has been made and eaten. I was concerned that my wife couldn't eat it due to the hot sauce and cayenne pepper in it. She did and said it had only a little bite. I'll make this again.
