In an effort to jump start this cooking forum with some ‘lively conversation‘ I’m posting my Mexican Shrimp Cocktail… As usual I will provide the recipe. I made it spicy, however, you can make it as spicy as you wish.

Mexican Shrimp Cocktail, I winged it and it was deliciouso…😘
This Mexican shrimp is a meal in itself…
I saw a pic of this shrimp cocktail on a website, however, the recipe was
not provided so, I winged it...and it was deliciouso!


I used 24 large cooked shrimp…
chopped a plum Tomato, chopped celery, chopped cucumber, jalapeño
peppers, chopped scallions, chopped cilantro, and chopped
Avocado…1 cup of tomato juice, fresh squeezed lime juice,
A couple tablespoons of ketchup mixed with a heaping tablespoon
of horseradish. A few dashes of hot sauce, salt & pepper.
Each Margarita glass held 12 shrimp and all the sauce. 👍



My guy suggested that I add Tequila to the mix…🥰
I did Tequila shots instead. 👍. It was awesome
My guy said it was a 29.95 shrimp coctail! 😀

19/21 count shrimp? I've found a seafood market off Galveston Bay that has the 19/21 count shrimp at $4.75/lb for 25lbs or 13/15 count for $5/lb for 10lb. Much better prices than those farther up the bay.

I donno….think so…they were large shrimp in the first post…the second post they were smaller. ..those are good prices..get some and make this shrimp cocktail. I know you like it spicy!
I make a lot of shrimp dishes..I’m never without between 2 and 4 lbs of shrimp in my freezer.
You have your shrimp scampi, shrimp with clams and salmon, shrimp salad, fried shrimp, shrimp with pasta.. I know, I know, I sound like Bubba Gump!

I gotta get a bigger freezer.

I donno….think so…they were large shrimp in the first post…the second post they were smaller. ..those are good prices..get some and make this shrimp cocktail. I know you like it spicy!
I make a lot of shrimp dishes..I’m never without between 2 and 4 lbs of shrimp in my freezer.
You have your shrimp scampi, shrimp with clams and salmon, shrimp salad, fried shrimp, shrimp with pasta.. I know, I know, I sound like Bubba Gump!

Here’s another delicious Seafood Festival..
just served with a salad..

Baked Clams
Baked salmon
Fried shrimp 😋
The salmon I put on salt/ pepper, garlic powder,
Paprika, dotted it with butter and sprinkled it
with Italian breadcrumbs and baked it in the air
Fryer @375° for about 8 minutes …I put the try
on the very bottom of the air fryer, then put the
Tray up higher to brown the top of the salmon
for two minutes

The shrimp I put on a little salt and paprika shook it in a plastic
bag with 3 parts flour and 1 part corn starch
Fried it quickly in a little hot oil.
The baked clams I made with two cans of minced clams.
this clam recipe is different from my stuffed clams that I
posted previously.

We drive down every once in a while to visit family and take a cooler with us to stock up on shrimp. Prices, where I'm at, aren't horrible, but I'd much rather get it fresh. We eat a lot of shrimp around here.

Growing up, we used to go down to the wharves when the shrimp boats came in, and I remember Mama getting trash bags filled with shrimp straight off the boat (she cooked for a full house). We'd take it home, dump it all in the sink, and see what other goodies got dumped into the bags along with the shrimp. Watching the banana boats unload was a treat as well.

Simpler times for sure.

I have a French door fridge with a large freezer on the bottom and we put in an under the counter
freezer in our kitchen remodel…it’s just a small freezer…both freezers are always packed full.
I no longer have a big freezer in the basement.…
That old Missouri truck driver we both know is after me to get big freezer. I'd love to have a big upright freezer to put in the garage but I can't convince myself it's a good idea when temps get over 100 deg in there in the summer.

Wooley, You don’t need it..

even more shrimp…

My Recipe for Very Lemony Spaghetti…only real
Lemon lovers need to try this lemony spaghetti.

Two tablespoons extra virgin olive oil.
4 cloves of sliced garlic.
3 tablespoons unsalted butter divided
About 1 1/2 cup pasta water* ( save some extra as well)

1/2 cup pecorino Romano
1/2 cup fresh lemon juice
Lemon zest of one lemon
Lemon skins sliced thin for garnish ( see pic)
Cracked pepper to taste
Chopped paisley
Pepper flakes to taste


Cook 1/3 to 1/2/lb of thin spaghetti ( for 2 people) in a ‘little’ salted
water cause you want the water to be ‘starchy.’
At the same time Sauté garlic in 2 T of olive oil
and 1 T of butter …lightly brown the garlic then add the
1 1/2 cup pasta water,
Add the lemon juice and lemon zest.
Heat up hot and add the cooked spaghetti, and cook it together for
a few minutes ( add more pasta water if necessary)
and lastly add the last 2 T of butter and 1/2 cup grating cheese..
dish out and sprinkle with more grating
cheese and chopped parsley and sliced lemon strips and cracked
Pepper to taste.

I served it with buttery shrimp scampi.

My Recipe for Shrimp Scampi
2 Tablespoon olive oil
2 Tablespoons unsalted butter (divided)
3 - 4 cloves of garlic pressed ( about 1 Tablespoon)
1/8 cup white wine.
1/2 lb of shrimp
Juice from 1/2 lemon
Salt/pepper to taste
pinch pepper flakes
1/8 cup chopped parsley

Sauté garlic and shrimp together in 1 T of olive oil and 1 T of butter
Until lightly brown…add salt/ pepper,
Pepper flakes and fry on one side for a minute
then add the wine, after a minute shut off flame
turn shrimp around and add the one remaining
Tablespoon of butter and then the parsley…
and then finish cooking the top side of the shrimp under
the broiler for a couple of minutes…watching carefully.

Shrimp Antipasto Dinner
I wanted to make fried shrimp…my favorite.
We go to this Italian Restaurant and every time
we go I get the fried calamari surrounded by
Caesar Salad or a Greek Salad.
Anyhow, I made a Greek salad with feta cheese and anchovies…
With fried shrimp on the side, and also
included corn salad and deviled eggs.👍💕


Corn salad recipe
1 can corn - drained
1 chopped tomato - Seeds removed
2 chopped scallion - green tops too
1 Tab fresh dill - or any other spice you prefer
1 Tablespoon fresh chopped basil
salt and pepper
2 rounded tablespoons mayonnaise
Chill in fridge for a couple hours

Yes I do. My top mount freezer has no ice maker, 3 or 4 pork butts 6 to 8lb boneless pork butts, 3 6 to 7 lb whole chickens, 15 lbs of butter. Several bags of mixed veggies for pot pies, 15 lbs of chicken breast, 1lb + each, several packages of smoked sausage in it and more likely I can't remember. Stuff falls out when I open the door.

You only have one freezer with your fridge? You have another big freezer, right?
I can’t live without an ice maker…mine recently broke,
we ordered one from Amazon and our son helped his Dad install it.
