Not to hijack Wolley‘s Tamale thread…I started this one on Mexican food…
I combined Mexican and Italian with this recipe.
Sausage and Pepper Tacos for Two with a side of
a bowl of warm black beans, and a Bloody Mary
rimmed glass with lime and then celery salt👍
I had flour tortillas that I wanted to use up
So, I thought sausage and pepper tacos, why not?
I made up this recipe and it was delicious.
First I browned the tortillas fast in a dry cast iron skillet.
Then I cooked up 1/2 raw white rice….
Then I fried up 1 1/2 thin sliced green peppers
for a few minutes, then added one small thin sliced onion
with salt/pepper until soft and browned….then added 3 cloves
Of chopped garlic and then added 12 oz of crumpled sausage and sautéed until browned.
Then I put a half cup homemade enchilada sauce ( recipe below)
and a couple shots of hot sauce and simmered for a minute longer…
Then I made a slurry with 1 teaspoon corn starch and 3 tablespoons
of Water and mixed it in to thicken it up a bit, so that it didn’t drip
out of the tortilla.
First, I put on a layer of rice on the tortilla, and then I put on the
Sausage and Peppers…
Now for the cheese…I didn’t know if I was going to top
It with mozzarella or cheddar? Mozzarella won out.😄
I closed them with a toothpick…put them on a foiled tray…
Then in the very bottom of the air fryer just
325° for about 10 minutes. Watching them the last few minutes,
to make sure that they didn’t burn.
Served them with a dollop of sour cream and some hot sauce.
They were soo darn good. 👍😋unbelievably good. I skipped
Breakfast and lunch and I ate two of them…the head groundskeeper
didn’t ship breakfast or lunch and he ate 3 tortillas and two
Bowls of beans. 😄
Enchilada recipe…( I had a 1/2 cup pre made already
in the freezer)
Enchilada Recipe…( freezes well)
1 chopped medium onion
2 cloves garlic chopped
1 small (6 oz) can tomato paste
2 cups chicken broth
2 teaspoons chili powder
1 teaspoon cumin seed ( or powder)
1/4 teaspoon cayenne pepper ( or more if you like it hot)
3/4 teaspoon kosher salt
1/4 teaspoon black pepper.
brown chopped onion a little olive oil...p
When browned enough -- add chopped garlic
and sauté a minute or so longer to lightly the
brown the garlic...add tomato paste and chicken
broth and spices/ salt and pepper and simmer for a few
minutes. ..Remove from and set aside until later.
Bowl of Black Beans
Here’s what I did…
2 cans (15 oz each)black beans with juice
1/2 chopped onion
1/2 chopped green pepper
2 cloves of chopped garlic
The spices…
Salt/Pepper to taste
1 teaspoon chili powder
3/4 teaspoon cumin
1 teaspoon smoked Paprika
3/4 teaspoon Italian seasoning
1/4 teaspoon cayenne pepper
1 - 2 teaspoon chopped jalapeño peppers ( optional)
1 Tablespoon lime juice.
1 cup water…
Scallions for garnish and chopped cilantro or parsley
Sauté green pepper and onion until translucent
add chopped garlic and sauté a minute longer
Then add all the spices and sauté for a half a minute longer…
Then add the beans, water, jalapeño peppers, and the lime
Juice…bring to a boil, lower temperature and continue
simmering for about 10 - 15 minutes until it thickens up…
Taste for salt…
garnish with chopped scallions and
Cilantro or Parsley… I used parsley.
It was soo good!
