I've tried making breakfast sausage patties. They weren't too bad but seemed a lot of work.

I haven't tried it yet but I'm thinking early spring might be the best time here to give it a shot. It'll help make some space in my freezer since I've got some big Boston Butts and a couple of shoulder roasts I can sacrifice to the cause.

Yep I've got 4 large Boston Butts. 3 will go for pulled pork and BBQ sauce, pressure canned. The fourth will make sausage and pozole.
