I make many different cheesecakes…this is an Italian cheesecake that i scaled down to fit into a 7” cheesecake pan…I make a lot of small cheesecakes. firstly, make sure that you do not use convection bake for cheesecake or any other baked cakes or cookies …as convection bake dries out baked...
