I have never made Alfredo sauce from scratch and have a recipe I want to try. I know I don't want to use the stuff with wood dust. Kroger has so many varieties at so many price points that I find it confusing.

What is a decent middle of the road parm cheese?

How much by weight do I need to make a grated cup?

Bonus points for a specific name. I hate shopping.

I think I have the Kroger Private Selection. I use a micro-plane to grate it over stuff.

I'm reminded of the time I worked in an Olive Garden kitchen. They were getting orders for something with Alfredo sauce. The guy working that station kept refusing them saying the "Alf" wasn't any good. That cooker/fryer was next to my station and not my responsibility. I looked and it was grainy, separated maybe so not being busy I grabbed a very large whisk and worked on it putting it back together. Tasted OK to me for a sauce made with a base. Word was out and no more orders however.

When I buy Parmesan I always buy the very best. Parmesan Reggiano. Its special.
Costco sells the it. Its about $19 a pound. But a wedge will last for months. I buy the Parmesan and the Pecorino Romano there as well.
Both are labeled Kirkland brand and are excellent.

Dinner was a big success. We made the Alfredo sauce and used it over Potato Gnocchi. Could not find any fresh or frozen gnocchi but did find a shelf stable imported product that was better than the last frozen one we tried.

Sorry. No pictures. :)

I found that I liked it a bit better with some added garlic powder applied at the table.

Next time I may go for the 18 month aged parm. The 10 month was good but a bit more flvor might be nice.
