I've been acquainted with Two Knots long enough to ask this question.
TK have you made this for the head Knot? If not I think you should give it a shot. I made it yesterday accompanied by mashed potatoes and sauerkraut, not like the recipe I'll post in a minute but the straight recipe and it wasn't bad. This version is smoked for a bit then finished. Two man job and I got an idea the head Knot will like it and you will as well.

I made something like it with an Agrodolce sauce.
If you’re game to try it, it’s unbelievably
Delicious. It’s an Italian sauce

For the pork chops:
Sprinkle pork chops with salt/pepper, paprika,
and garlic powder…coat with Agrodolce sauce on
both sides…put in air fryer @400° for 18 minutes
Turning once…the pork chops were delicious and soo
Tender.

My Recipe for Agrodolce sauce
1/2 cup of Balsamic Vinegar
2 tablespoons red wine vinegar
1/2 teaspoon thyme
2 cloves whole garlic smashed
Pinch salt
4 Tablespoons honey
4 tablespoons unsalted butter at room temperature.
Put vinegar, garlic, salt and thyme is sauce pot and simmer
for about 4- -5 minutes until reduced by half…remove from stove
and stir in honey and then the butter and mix…remove the garlic,
and coat the pork chops.
