I've been acquainted with Two Knots long enough to ask this question.
TK have you made this for the head Knot? If not I think you should give it a shot. I made it yesterday accompanied by mashed potatoes and sauerkraut, not like the recipe I'll post in a minute but the straight recipe and it wasn't bad. This version is smoked for a bit then finished. Two man job and I got an idea the head Knot will like it and you will as well.
