I've made a good KimChi once many years ago, failures since. Tried sauerkraut, failed also. Now I'm trying fermented hot sauces basically following this recipe, at the bottom of the linked page.

Sauerkraut is one of my favorite foods. Since I'm the only one in the house who eats it, I get it only a couple of times per year. I won't try making it. Cutting any recipe down to size for me would result in more effort than it's worth.
I have a jar of Claussen sauerkraut in the frig at all times, I'm the only one that eats it. Flour tortilla, chunk of smoked sausage, sauerkraut maybe some hot sauce. A fine breakfast or anytime.

Never had KimChi. I want to try it. Then maybe make some. It sounds like something I would enjoy.
I've eaten KimChi for years before I spent some time working at a Korean owned company after retiring. The Koreans were in awe that I was the only round eye there that ate the stuff and had good skill with chopsticks according to them.

I aspire the reach that level of proficiency with chopsticks.
Sometimes I buy frozen dinner bowls such as Marie Callender's and I use chopsticks to eat them. When I order Chinese delivery I use them. When we used to go out for Asian before Covid I'd use them. Actually I think the food is more satisfying using chopsticks.

Some of my foods end up fermented, like it or not. Sometimes they're good, too.

Hmm. So-Cal is Kimchi central, there's a lot of Koreans out here.
Lots of Koreans here and other Asians. There is at least one place in the big town that makes a lot of the KimChi. I've eaten gallons of it.

My grandfather says the first good paying job he had was at the pickle factory. Wherever it was, it's been closed for many years. He says they hired him in at $1.85/hr and that was a 20 cent raise on wherever he worked before.

My wife liked kimchi and I made it once. I grew a good little crop of cabbages this year but I used them all for cole slaw, stir fry, or soup. If you want to clean your system, eat kimchi and brown beans in the same day. Constipation is impossible!

Sounds like one of my first machine shop jobs $1.65, changed companies $1.85.
I don't know about the brown beans but I do know KimChi will clean you out if you're not careful. I used to have ramen noodles with KimChi for breakfast. Too much KimChi in it and it wouldn't take long for a mad dash to the restroom.

You may remember I said that I was going to try my hand at fermented hot sauces and I have. One a Hungarian Banana pepper and Manzano pepper another 100% Poblano peppers. Both were thin and watery at first. I added lecithin to them and that helped. Sometime later after I received some Xanthan Gum I added that. Now 4 or 5 weeks later they have developed a consistency and taste I like, I think I added a bit of sugar to the poblanos. A bit of a bite on the former and a nice taste on the later which I was going to throw out. It's a keeper now. Actually I'm almost out of the Banana pepper sauce and need to start another larger batch. Hmm, I've got a 5 liter fermentation pot. Nah, that's too much. 80 oz pickle jar, hmm, maybe. I've got 7 of them but I need to make 3 or 4 gallons of BBQ sauce for my canned pulled pork and BBQ sauce baked beans.

Thought about fermented h/s but well, my current go-to's aren't. I should try it at least once.

Similar to sourdough starter (for bread). Did the starter once and just seemed too much effort when my overnight versions were totally satisfactory.

Get out of the rut Len and try something new 😁

I think I've got a link to that website/blog already but can't find that folder. My computer filing system is in ruins after I changed browsers.

IIRC, switching browsers-->the new browser should ask if you want to import favs/bookmarks.

There is also an option in there (all browsers should have this) to import at any time.

Yes to both and I did that but some stuff didn't make the trip for some reason. I did finally find the folder I was looking for and managed to copy it to the new browser but though I recognized the page you posted I didn't have a link to it. Do have now.
