Eggplant Parmigiana Pizza is what’s for dinner and it was deliciouso.😋
It’s pizza with two layers of eggplant parmigiana.
I did a pictorial of the pizza making.
Here’s what I did…stretch one recipe of pizza dough on a slightly oiled big baking sheet and brush the pizza with a little olive oil….then put the pizza in the oven when the oven reaches 325° for about 5-6 minutes to
Pre bake it a little…then remove the pizza and smear on a layer of sauce and then a layer of fried eggplant..
Then Sprinkle it with grating cheese, parsley and mozzarella…then put down another layer of fried eggplant..more sauce, parsley and grating cheese…( don’t put on the top layer of mozzarella until you bake the pizza)
Put the pizza in the oven at 425° for 12 to 15 minutes. Then remove it and put
the mozzarella on top and put the pizza back in the oven until the mozzarella melts ( for about 5 minutes)
The eggplant was prepared ( after salting and drying it off) by putting the
Eggplant in a plastic bag with flour…then dipped in 3 eggs with 3 tablespoons half and half, a handful grating cheese and some chopped parsley.
After frying them lightly salt them with kosher salt.
