I started this thread, not to hijack the other chili thread…
I also make an Italian version of this with mozzarella.
Chile stuffed green belle peppers.
Made the chili with :
one pound of ground beef
1/2 big chopped onion
2 cloves chopped garlic
1 - 16 oz can red Chile beans drained ( kidney beans)
about 2 cups tomato sauce.
Salt/ pepper, 3 tablespoons chopped parsley,
1 teaspoon cumin, 1 1/2 teaspoons of chili powder,
A couple pinches cayenne pepper, A couple pinches
of red pepper flakes. If you want it less spicy put in less
Pepper flakes and cayenne pepper.
Sauté onions and garlic in a little vegetable oil until lightly
browned add the ground beef and simmer until the beef is cooked,
add the spices, beans and tomato sauce…simmer on low with a diffuser
on the flame for about 1/2 hour or so…
Cut peppers in half clean out the seeds and place the peppers in
a pot of boiling water and boil peppers for 6 minutes… remove peppers to
a dish…
Put a layer of tomato sauce in the casserole dish, put in the peppers
and fill them with the hot heated up Chile…put it in a 375° oven for
about 35 minutes.
Remove them after 35 minutes and put on grated cheddar cheese and put it back in the oven for a few more minutes.
I served it with a little bit of bow tie pasta….the head guy was very happy,
He loves Chile. 👍😋 serve with sour cream, chopped raw onion and chopped jalapeño peppers 😋
Note: boiling the green peppers for 6 minutes will allow them to still have
a little bite to them…that’s they way we like them…also, it cuts down on the baking time a lot. 👍 also, make sure when you fill the peppers the chili
is hot before putting them in the oven.
