Chicken Parmigiana over fried Zucchini is what was for dinner tonight.
My thoughtful son just bought me 4 of these nice big pasta bowls
They are in different shades…his wife dropped them off this morning
with their pup…i christened them with fried Zucchini topped with
some hot marinara sauce then topped with chicken cutlet parmigiana.
Oh my, this was soo delicious, 😋 BTW I fried the zucchini earlier and heated them in the microwave just before putting the chicken on top.
It was so good, I only wished I made more zucchini for a double layer👌
For the fried zucchini:
First slice zucchini thin and place in colapasta, and salt
Them…after about 1/2 hour dry the zucchini with paper towels
and shake them in a plastic bag until the are all coated
Then dip in one egg scrambled with 2 tablespoons of
half and half and two tablespoons parmigiana grating cheese.
Fry in a little vegetable oil.
For the chicken cutlet:
Dip in flour first
Then egg wash with grating cheese and a dollop of
half and half…then dip in half breadcrumbs and half
Panko breadcrumbs seasoned with chopped parsley and
a little parmigiana cheese…fry in vegetable oil.
Put down marinara sauce in oven proof dish and put down chicken,
Top with more marinara sauce, grating cheese and mozzarella
and put in 375° oven to heat up ( for about 12 minutes)then put
on mozzarella and return to oven until cheese melts.
Put the chicken on top of hot zucchini and enjoy.
Italian pasta salad
Cook 1/2 lb of tri color Rotini in salted water
Drain and drizzle with a little olive oil
and let it cool down to room temperature.
Then add:
Some sliced and fried zucchini in evoo
Chopped tomato
Thin sliced hot house cucumbers
Chopped Red onion
Chopped scallions
sliced green olives
Sliced kalmata olives
Chopped parsley
Chopped basil
salt/pepper to taste
1/4 teaspoon garlic powder
Dressed with Extra Virgin Olive Oil
and a little Red wine Vinegar
Serve at room temperature 😋
