My own concoction I've made for 25+ years, tweaking the whole time (as usual). When I eat, I like a meal, so over time I've made this more and more hearty.

Ingredients
  • 1.3-1.5 lbs. boneless skinless chicken breasts
  • 1 box frozen peas
  • 1 med. White onion
  • 1 bunch green onions
  • 4 stalks celery
  • 2 cloves garlic
  • 1 cup uncooked rice or noodles
  • Olive oil
  • Salt/pepper
  • 45ish oz chicken broth
  • 1/4 cup dry white wine
  • 1/8 cup parsley


Instructions
  1. Cube chicken, sauté in oil, remove.
  2. Add more oil if needed and sauté green onion, garlic, white onion, celery.
  3. Add chicken back in with remaining broth, salt and pepper to taste, and rice or noodles.
  4. Add water to desired height, then add wine. Bring to boil.
  5. Add peas and parsley.
  6. Reduce heat and simmer for at least 30 minutes.

* secret ingredient: If the broth is bland (because you used more water), add a chicken bouillon cube or something similar (I use Knorr, 1 cube to 2 cups water)
