My own concoction I've made for 25+ years, tweaking the whole time (as usual). When I eat, I like a meal, so over time I've made this more and more hearty.

* secret ingredient: If the broth is bland (because you used more water), add a chicken bouillon cube or something similar (I use Knorr, 1 cube to 2 cups water)
Ingredients
- 1.3-1.5 lbs. boneless skinless chicken breasts
- 1 box frozen peas
- 1 med. White onion
- 1 bunch green onions
- 4 stalks celery
- 2 cloves garlic
- 1 cup uncooked rice or noodles
- Olive oil
- Salt/pepper
- 45ish oz chicken broth
- 1/4 cup dry white wine
- 1/8 cup parsley
Instructions
- Cube chicken, sauté in oil, remove.
- Add more oil if needed and sauté green onion, garlic, white onion, celery.
- Add chicken back in with remaining broth, salt and pepper to taste, and rice or noodles.
- Add water to desired height, then add wine. Bring to boil.
- Add peas and parsley.
- Reduce heat and simmer for at least 30 minutes.
