ndividual Lasagna for two…and it’s awesome.

I read a recipe for this and
I made changes to the recipe to fit my needs.
I also added two fried Italian sausage that I took out of
the skins. I did a pictorial of the process
So, here we go, lasagna for two, my way.

First the noodle
2 eggs
1 tsp salt
1 cup water
1 cup flour
1 1/2 tsp olive oil.
Make the batter and then let it rest for 15 minutes
then Lightly oil a small skillet and and with a pastry brush spread
The oil all over the pan …pour a 1/4 cup of batter
In the skillet and immediately swirl around to coat pan
After a minute flip over the crape and do the other side.
This recipe made 9 crapes ( I only needed 6 )
I used my little oval skillet cause it’s 6” x 9” and it fit
6” x 9” my Corning baking dishes perfectly.
How lucky was that? However, you can use a small round
Skillet to make these crepes.

The Ricotta filling…to make two portions..in a 6 x 9 dish
I estimated that I needed about 1 1/2 rounded cups of ricotta, two tablespoons grating cheese,
1/2 cup grated mozzarella, Two tablespoon chopped parsley…salt/pepper to taste and one tsp of olive oil.

To assemble
Put a layer of sauce on the bottom of the dish, add a crape put rounded
Tablespoons of ricotta down, spread it out put either chopped meatballs or sausage down and more grating cheese and mozzarella..then put a
Little sauce on top…put another noodle down, some more ricotta and
Grating cheese and mozzarella and then more meat and more sauce. lastly put another noodle on top …press down slightly and top with sauce, and grating cheese, and drizzle with one tablespoon olive oil on the top?.
Put it in a hot 400° oven for 15 minutes, then put more mozzarella on top
and put it back in the oven for 5 minutes to melt mozzarella.

I served it with a salad of spinach, red onion, tomatoes, kalamata olives
and croutons…the dressing is 2 tablespoons EVOO, 2 teaspoons wine vinegar, 1/2 teaspoon Italian seasoning, 1/8 teaspoon of garlic powder,
1 teaspoon honey, 1/8 teaspoon kosher salt black pepper to taste.

Bake 400° - 425° for about 15 minutes until bubbly. Then remove and top with Mozzarella and continue baking until cheese melts, about for about
another 5 minutes.
Note: you can make this without sausage or meatballs, but given
a choice I highly recommend the sausage.😋👍 it was so delicious.

You can use a small 6” skillet and just overlap the noodles to fit ito the little casserole dishes that you have. I managed to eat 1/2 of mine…but the heat knot ate the whole thing.
I’m glad that you’re going to give it a whirl.👍

I also make big lasagna’s for company…
I make it in a basket fashion…its two layers thick…
then the sides are bought over the top.
I also made a lasagna basket recently that has a layer of cheese on the bottom
and two layers of eggplant parmigiana in the middle.
this is the pic’s of the regular lasagna made in a basket.

This is the lasagna in a basket …in the middle there is two layers of eggplant parmigiana.
the eggplant is first salted and let the moisture come out ( for one hour) then dried off and dipped in flour and then dipped in eggs, lots of grating cheese and a dollop of half and half.
this was delicious.

Interesting. Square pan, or 7x11 or 9x13 can't tell for sure from the pics.

9 x 13…I went to all this work and invited my son and his family for dinner and they had to cancel cause grandson had a fever…bummer…anyhow, I set up the dining room for the two of us…
presentation is everything…like you always say Wooley, first you eat with your eyes…
btw…daughter in law picked up the leftover the next day…👍 I was happy for that.

I forgot how I came up with this recipe eggplant parmigiana lasagna) someone said to me - that they love eggplant parmigiana, even better than they love lasagna…so, a light bulb went immediately off in my head and I came up with this combo. 😀
