Boneless chicken Thighs

Boneless chicken thighs and pasta salad tonight.
I first boned 4 Chicken Thighs then seasoned with salt/pepper, garlic powder,
Paprika, on both sides and a light smear of unsalted butter on top, and extra
Virgin olive oil…
put the chicken in the air fryer skin side down and roasted it for 12 minutes, @ 400°

Turned over to skin side up and roasted it for 8 more minutes…then covered it with the fried garlic and roasted it for 4 more minutes…oven thermometer registered 180°

Also made a Pasta Salad with bow tie pasta, defrosted frozen peas, chopped scallions, salt/ pepper, a couple pinches of Italian seasoning, dressed with extra virgin olive oil and red wine vinegar…served at room temperature.
Served the chicken over a chopped tomato and chopped red onion with salt/pepper, EVOO and red wine vinegar and torn basil.

note: garlic is fried slowly in EVOO …it tastes like it’s oven roasted with a mild nutty flavor.
tilt the pan, and slowly fry the garlic until thoroughly soft and browned and then mash it.

Boneless thighs are such a versatile ingredient.

You know, I never likes thighs until I got an air fryer..then I started using marinades and different sauces and now I love them…still won’t eat a chicken leg..

Breast for some dishes and thighs are about all the chicken we eat. Wings don't count.
