I posted this yesterday on our sister forum. I thought I would post it here as well.
So I'm checking out some meat at the store. I happened to be in a Walmart with my wife. I ran across a vacuumed pack of beef cheek meat. It was $6 a pound and why I bought it. I have no idea what I purchased and have no idea how to handle it.
There is a web site on the package I will check out.
Anyone familiar? Know anything about cheek meat?

The birria taco is really about the sauce. The style is served very wet. Since beef cheeks are quite difficult to get in Southern Ohio, most places are subbing brisket for the meat. Another common substitution is short ribs, as in the video above. Done well, it's one of those stick to your ribs comfort foods that warms from the inside.
