Roasted Italian Potatoes, Spare Ribs, side salad,
A is what was for dinner tonight.

Wash and scrub potatoes…Cut them up into small pieces.
Coat them in extra virgin olive oil and put on salt/ pepper to taste.
Sprinkle with one teaspoon Italian seasoning, 1/2 teaspoon paprika,1/4 teaspoon garlic powder, a couple of sage leaves chopped, I then heated my cast iron skillet and fried the oil coated potatoes for about 10 minutes until they were halfway cooked. Then shut off fire and sprinkles with Italian parsley and about 1/3 cup grating cheese…Then put them on a parchment pan
and put them in the air fryer for 10 minutes & 375°

For the spare ribs: cook in crock pot for 4 hours on high.

cut the rack of ribs in half to fit into the crock pot…coat with BBQ Sauce
and put into crock pot…cook on high for 2 hours…after 2 hours swap the
Ribs…swap the top ribs with the bottom ribs and cook for 2 more hours

Then remove from crock pot and put them on a parchment lined cookie sheet and cut them up and douse with more bbq sauce …
Put in 375° oven for about 1/2 hour. I used masterpiece bbq sauce.( but
you can use any bbq sauce of your choice)
The meat fell off the bone…👍😋😋😋
note, you could also just put them under the broiler and turn them…

Good to see you! I was losing weight. ☺

I've never tried ribs in the crock pot but I hear people say they are wonderful. The oven; is that just to get them good and gooey or does it help give them a crust?

From your pics, those are baby backs, not spare ribs.

Sorry to be negative but: cooking them on high for 4 hours just sucks all the flavour ie juices out of them.

I would suggest (if you're going for 4 hours of cooking), do them low and slow for 6 hr in your oven.

Put your chosen rub on them, put 'em on a tray (not a roasting pan) , oven set at 235-240o and close the door.

Too big to fit on the rack? Roll them like this. Works for spares and backs.

At about the 3 hr mark, wrap individual racks with alum foil and put em back in for another 1 1/2 to 2 hr. THEN unwrap them and give them another hour unwrapped.

Good ribs do not need sauce . To each his own so it's ok (y) (but you can still sauce them in the last 10 min or so by putting the sauce on and under the broiler for 2-3 min. Then sauce again and back under for another 2-3 min, all the time making sure they don't "burn".

Spares-3hr/2hr/1hr
Backs-2hr/2hr/maybe 30 min more.

Well I guess I'm just a rib snob. Prefer them cooked outside on the grill. Lately though out of laziness and the cost of charcoal I've done BB ribs in the oven and they were good. My slow cooker is on a shelf I could just barely reach when I put it there, not sure I can get it off now :rolleyes:.

Only as a better alternative to a crock pot if you must do it indoors.

For me: smoker # 1, grill #2, oven #3.

I also will do spares in my instant pot then under the broiler to crisp up the outside.

You know I first had the cooked like this at my grandsons christening party, my sister bought a big tray of them over…everyone, went crazy for them cause they were so delicious…when my son had the christening party for his other son, my sister bought another tray of spare ribs…to which my son quipped,
Aunt Pat, this was the only reason that I had another kid! 😄

Cooking styles vary across regions and cultures. In the South, most ribs are smoked, same with brisket. However, I also know an oven-roasted brisket is quite popular in many Jewish households and if done well, it's insanely good. Different than what I'm used to but still good.

I might have to try the crockpot or the instant pot. Oven is a no go if it has to run for 4 hours, it's never cold enough to let the oven run that long, and we sold the smoker a long while back.

IP takes about 10 min to get to pressure, 15 min to cook and about 45 min to natural release. Fresh OR frozen. 5 min under the broiler and you're ready to eat.

I can fit about 4lb in there at one go.
