Finally got around to making something that has been on my mind for awhile. I'm sure its been done before but I had no recipe.

This is quick and easy. A hearty lunch for 2. Could feed 3. Maybe 4 if 2 are small kids.

1 cup long grain white rice
1 can Cream of chicken soup
1/2 can milk (or a little less)
1.5 -2 slices of processed swiss cheese per serving (I used 1.5, Aldi singles)

Cook the rice, top with cheese, cover with the soup mixture.

Add black pepper to taste at the table.

I had a bowl with the cheese and refill without. The cheese adds a lot flavor,
